Okay so I can only answer your third question, but it's the most important of all! I am an expert on working out London underground routes :D
If you're getting the train into London, get tickets to Stratford station. Much easier than going into Liverpool Street or anywhere else, and it's a lot closer to the ExCel.
While you're at Stratford, purchase a one-day travelcard. It's £6.30 and you can travel wherever you want within zones 1, 2, 3 and 4 (which, don't worry, is more than you'll need for this trip) after 9:30am.
From Stratford, you need to get on the Jubilee line (grey on all Tube maps and signs at Stratford station) to Canning Town. From there, change onto the Docklands Light Railway (upstairs on Platform 3), and Custom House for ExCel Station will be your second stop. And then you're there! Same route on the way back, except reversed ;)
